Pomegranate Chia Parfait

If you want a simple energy-giving, high protein, high fiber breakfast or snack with only a little bit of planning, this is the one. If you’re like me, it gives all the textures. I lived off of tapioca pudding as a kid and this is the next best thing without the harmful sugars and additives!

Prep Time: 15 min | Refrigeration Time: 2 hours | Total Time: 2.25 hours

Serving size: 2

Ingredients:

CHIA PUDDING

1. 1 cup plant milk (unsweetened)

2. 1/4 cup chia seeds

3. 2 teaspoons maple syrup

4. 1 teaspoon vanilla extract

PARFAIT

5. 1 cup yogurt (dairy or dairy-free)

6. 1/4 cup sliced almonds

7. 1/2 cup pomegranate seeds (or any fruit)

Instructions:

  1. Chia pudding: Stir together the almond milk, chia seeds, maple syrup, and vanilla extract together in a bowl. Let it sit for 10 minutes, then stir once the seeds have started to gel. Cover the bowl and place it in the fridge for two hours.

  2. Parfait: Add the yogurt to a bowl. Stir in the chia pudding. Top with almond slices and pomegranate seeds.

  3. Eat half of this portion and share the other half with a lucky person or save it for the next day. Enjoy :)
